Ethiopia Banko Gotiti Natural

Ethiopia Banko Gotiti Natural is a specialty coffee produced by the Banko Gotiti cooperative in the Gedeb district of the Gedeo Zone, where Yirgacheffe is located. The coffee is made up of native Ethiopian heirloom varieties, grows at 2,300 metres and is natural processed. In Haimoo's roast profile the cup shows floral notes, forest berries and stone fruit.

The lot is a Grade 1 natural Yirgacheffe, and it is traceable to the village of Banko Gotiti and its washing station.

Who produces Ethiopia Banko Gotiti coffee?

Behind this coffee there is not one farm but a whole village. Banko Gotiti lies in the Gedeb district of the Gedeo Zone, and the village's roughly 300 smallholders work together as a cooperative. It was set up in 2012 as a unit of its own, apart from the larger Worka cooperative.

The farms are small, mostly under a hectare, and the coffee trees grow in among other crops. That is why they are often called coffee gardens.

At harvest time the farmers bring the day's cherries to a nearby washing station, where they are sorted and weighed. Because one day's cherries are processed as a single lot, we know the coffee's origin down to the village and the washing station, not the individual farmer.

Fertilisers and pesticides are typically not used by the farmers here.

Where does Ethiopia Banko Gotiti grow?

Banko Gotiti coffee grows in the Yirgacheffe highlands at 2,300 metres. The climate is warm and tropical, with moderate wet and dry seasons and thick vegetation. Most of the coffee trees grow in the shade of taller trees.

The crop is picked between October and January.

In Ethiopia coffee is at home: this is where Arabica comes from. Coffee trees grew wild in the forests before anyone began to cultivate them, and coffee has been part of everyday Ethiopian life for centuries.

What are Ethiopian heirloom varieties?

Ethiopia has its own local coffee varieties, known collectively as heirloom. They grow mixed together on the farmers' plots, so this lot cannot be named after a single variety.

What does natural processing mean?

In natural processing the cherry is not pulped before drying: the bean dries inside the fruit. At Banko Gotiti the cherries reach the washing station on the day they are picked. They are sorted by ripeness and quality and rinsed.

Drying takes place on raised beds, and the cherries are turned all the time so that they dry evenly. Depending on the weather, this takes from 8 to 25 days.

What does Ethiopia Banko Gotiti Natural taste like?

Ethiopia Banko Gotiti Natural is a sweet and floral coffee with balanced acidity.

The cup tastes of forest berries, such as bilberry, and the mouthfeel is jammy.

Alongside the berries come floral notes and stone fruit.

Banko Gotiti is for those who like sweet, berry-like and floral coffees.

How should you brew Ethiopia Banko Gotiti Natural?

The roaster recommends Ethiopia Banko Gotiti as filter coffee. It works just as well brewed by hand with a Hario V60 as in an ordinary coffee maker, and as filter coffee it shows its floral notes and forest berries.

If you like an intense, light roast espresso, Banko Gotiti works excellently there too.

The roastery's recipe for filter coffee: 20 g of coffee, 300 g of water and a water temperature of 90 °C.
